- 7 eggs
- 1kg/500g of sausage
- 2 cups of dried bread crumbs (seasoned)
- 125g or 1cup of all purpose flour
- 2 beaten eggs.
- PREPARATION
- Pre-heat oil in deep fryer to 375degree F(190 degrees C)
- Place eggs in boiling water for 8 minutes. Remove from hot water and place in cool water then peel.
- Flatten the sausage and make a patty to surround each egg, very lightly flour the sausage and coat with beaten egg. Roll in bread crumbs to cover evenly.
- Deep fry until golden brown or pan fry while making sure each side is well cooked.
- Cut in half and serve over a bed of lettuce and sliced tomatoes to garnish.
