1kg Chicken Gizzards
300g or 1 small tin mushrooms
2 Green Peppers
4 Red Bells peppers
Spring onion
5 medium tomatoes
5 red pepper (scotch bonnet)
1 medium sized onion
4 medium sized carrots
5 green beans
1 tablespoon corn starch
100ml vegetable oil
Thyme, curry powder, salt and seasoning
Procedure:
1. Wash, season and steam the Gizzards for
about 10minutes. Then remove from stock and allow to cool.
2. Wash de-seed and chop the peppers into medium long strips. Also was and chop up the onions, green beans, carrots and tomatoes not into tiny bits but medium long strips.
3. Chop the mushrooms into 4 halves per piece and the Gizzards into medium long strips too.
4. Place your saucepan over medium heat and add in the vegetable oil, then allow to heat up.
5. Add in the chopped onions, tomatoes and scotch bonnet pepper and stir fry for 3-5minutes
6. Add in the chopped Gizzards and stir fry for about 3 minutes then add in the remaining chopped ingredients and stir.
Allow simmer for about 1 minute then add in the meat stock and the corn starch, stir gently.
7. Taste for salt before adding salt and seasoning, then allow simmer for another 2minutes and it's ready to eat.
8. Serve warm boiled rice or pasta 👌👍😘🍴🍛🍲
